Font and colour of the top line come from your Character panel. Split = every 2-line caption becomes two layers, the bottom line shows up when it is spoken.

Select the video / audio layer (or both) and press the button. Every pause between speech is cut, only a tiny bit is kept around the words, the gaps close, the start and the end are trimmed and the comp gets shorter. One Ctrl+Z undoes it.
Cuts the person out of the frame at the playhead. The editor opens in its own big window: large canvas, brush size, softness, strength, stabilizer, shrink / grow / smooth / feather, undo / redo.
